Clemans Distillery is located in Northwest Bulgaria, at the foot of Stara Planina.
It was established way back in 2007, initially working as a small brewer for brewing brandy, serving the local population. In 2011 we received a license as a small distillery and from there the real work actually began - experiments with different grape varieties, fruits, technologies, fermentation methods, trying out different vessels and volumes. So for more than 10 years, driven by the drive to develop and upgrade, after hundreds of thousands of tons of material and countless hours of round-the-clock work, we gradually built our own recognizable style and brand, named - The Alchemist a posteriori.
Our brandies are created with a lot of love because we love what we do and we do what we love. Our every action is subordinated to quality and taste. This has always been part of the vision and continues to be a priority. The production is traditional, but this does not prevent us from being open to experiments. We always take an innovative approach, with a modern scientific understanding of the manufacturing process, and fine-tune it along the way.

Technology

The grapes are separated from the bunches, ground and fermented without the presence of sugar, yeast and other additives. Once the fermentation process is complete, the material is immediately distilled in a still with a distillation column, very precisely separating the body from the head and tails, which are not used for redistillation. The distillate is stored in stainless steel vessels. Softened water is used for dilution. According to its characteristics and the desired vision as a final result, the brandy is aged in oak barrels for a different period of time.
